Gaspacho

Gaspacho (alternatively spelled Gazpacho) is a cold Mexican soup.

4 portions

10 medium size tomatoes
1 green pepper
1 cucumber

1 small onion
2 garlic cloves

1 tbsp balsamic vinegar
3 tbsp olive oil
1 red chili

salt and black pepper according to taste

Quarter the tomatoes, dip them into boiling water for one minute, and douse them with cold water. Put into a mixer.

Cut pepper into small squares. Peel the cucumber and cut into cubes.

Cut onion, garlic, and chili into small pieces. Add into the mixer all the ingredients save half the cucumber cubes and green pepper squares and blend well.

Add remaining half of the cucumber cubes and the green pepper squares into the soup.
