Boiled rice

It is better to use whole (brown) rice as its shell contains nutrients of vital importance in the diet and it has more aroma. However, white rice cooks much faster. Boiled rice is eaten with dal and sambar. Combines well also with Zurich chickpeas.

2/3 cup basmati rice
1/2 tsp salt
1 1/2 cups water

Place rice into a pot, add salt, cover with water, and bring to boil.

Stir once, cover with a lid, and cook on slow heat for 12 minutes for white rice and 40 minutes for brown rice.

If water is not fully absorbed, cover again with the lid and cook for several more minutes.
