Carrot cake

6 portion

1 1/4 cup whole wheat pastry flour
2/3 cup molasses

1 tsp salt
2 tsp cinnamon
2 tsp vanilla

1/2 cup raisins
1 cup carrots
1 cup shelled walnuts or pecan nuts

Dissolve molasses in equal amount of warm water. Add salt and spices. Pour the liquid into the flour and mix carefully.

Finely grate carrots and chop or crush the nuts. Add raisins, carrots, and nuts into the dough and mix.

Heat the owen to 175 C. Put the dough into a buttered or a nonstick pan. Bake 35-45 min.
